Ingredients

  • 1 (4 oz.) can whole green chilies, drained, seeded and chopped
  • 2 cups shredded Monterey Jack or Cheddar cheese
  • 1 cup baking mix
  • 1 cup half and half
  • 4 eggs

Instructions

  1. Preheat oven to 375°F.
  2. Grease a 9 x 9 x 2-inch square pan. Sprinkle chopped green chilies and shredded cheese evenly in the pan.
  3. In a blender or by hand, beat the baking mix, half and half, and eggs until smooth, about 15 seconds in a blender or 1 minute by hand.
  4. Pour the mixture into the prepared pan over the chilies and cheese.
  5. Bake for about 30 minutes until golden brown and a knife inserted in the center comes out clean.
  6. Let stand for 10 minutes before cutting into squares.
  7. Cut into 1 1/4-inch squares and serve.
