Ingredients

  • 1 1/2 cups leftover meat (pork, chicken, steak, or hamburger)
  • 1 medium onion, chopped
  • 1 (8 oz.) can enchilada sauce or tomato sauce
  • 4 large flour tortillas
  • 1/2-inch hot oil in skillet
  • 1/4 cup black olives, chopped
  • shredded lettuce
  • chopped tomatoes
  • 1 cup shredded Cheddar cheese
  • hot peppers to taste

Instructions

  1. In a skillet, heat 1 tablespoon of oil.
  2. Add chopped onions and cook until they are clear.
  3. Add leftover meat, chopped olives, enchilada sauce, and hot peppers to taste; cook until heated through.
  4. Divide the mixture among the flour tortillas.
  5. Fold the ends of each tortilla in and roll into a packet, fastening with toothpicks if necessary.
  6. Heat hot oil in a skillet.
  7. Brown each chimichanga for 1 minute on each side until golden.
  8. Serve on a bed of shredded lettuce, topped with shredded Cheddar cheese and chopped tomatoes.
