Ingredients

  • 1 large head nappa cabbage
  • 5 to 6 green onions
  • 4 Tbsp. butter
  • 2 pkg. Ramen noodles
  • 1/2 small bottle sesame seed
  • 4 oz. slivered almonds
  • 3/4 c. oil
  • 1/2 c. red wine vinegar
  • 1/4 c. sugar
  • 1 tsp. soy sauce
  • salt and pepper

Instructions

  1. Slice the cabbage very thin and toss with chopped green onions.
  2. Melt butter in a skillet. Crush the ramen noodles into small pieces.
  3. Add the crushed noodles, sesame seed, and slivered almonds to the melted butter.
  4. Cook until browned, then remove from heat and let cool.
  5. In a separate bowl, mix oil, red wine vinegar, sugar, soy sauce, salt, and pepper to make the dressing.
  6. Toss the cabbage mixture with the cooled noodle mixture and dressing until well combined.

Tips & Substitutions

For extra crunch, consider adding shredded carrots or chopped bell peppers to the salad. If you can't find nappa cabbage, regular green cabbage works as a substitute. For a gluten-free version, use gluten-free ramen noodles or substitute with rice noodles. Adjust the sweetness of the dressing by adding more or less sugar based on your taste preference.

Serving Suggestions

This Chinese Crunch Salad makes a great side dish for grilled meats or can be enjoyed on its own as a light lunch. It pairs beautifully with Singapore Spicy Noodles for a complete meal. Consider adding some grilled chicken or tofu for added protein, or serve alongside your favorite Asian-inspired dishes.

Storage & Reheating

Store any leftover salad in an airtight container in the refrigerator for up to 2 days. Keep the dressing separate until ready to serve to avoid soggy noodles and cabbage. To refresh the salad, add a splash of fresh dressing before serving.
