Ingredients

  • 1 chicken, boiled and deboned
  • 1 cup chopped bell pepper
  • 1 teaspoon sage
  • 2 small cans sliced mushrooms

  • 1 stick margarine

Instructions

  1. Cook Rice a Roni as directed on the box, using chicken broth instead of water.
  2. Melt 1/2 stick of margarine in a skillet and add chopped bell peppers, chopped onions, diced celery, sage, and sliced mushrooms.
  3. Cook the vegetable mixture until tender.
  4. Remove from heat and add the cooked vegetables and mushrooms to the prepared Rice a Roni.
  5. Add the deboned, cooked chicken to the mixture.
  6. Season with salt and pepper to taste.
  7. Pour the mixture into a baking dish.
  8. Melt the remaining margarine and drizzle over the top of the casserole.
  9. Bake at 350°F for 30 minutes until heated through and golden on top.
