Chicken With Peanuts

- Debone the chicken and cut into pieces.
- Heat 2 tablespoons of oil in a wok and sauté the chicken for 5 minutes. Remove the chicken from the wok.
- Add remaining oil with garlic on toothpicks (to remove easily) and cook until garlic browns.
- Rub the garlic over the wok, then discard the garlic.
- Add peanuts, chopped green onions, hot sauce, cooked chicken, soy sauce, and sugar to the wok. Cook for a few minutes.
- Stir in broth and bring to a boil. Add the cornstarch mixed with water and sherry.
- Cover and simmer until thickened.
- Serve over rice. Do not add peanuts, cornstarch, sugar, or sherry until just before serving.
