Ingredients

  • 2 c. sliced celery
  • 1 c. sliced onion
  • 2 Tbsp. peanut oil
  • 1 (10 oz.) can chicken broth
  • 2 c. bean sprouts
  • 1/3 c. bamboo shoots
  • 1/3 c. water chestnuts
  • 2 Tbsp. cornstarch
  • 2 Tbsp. soy sauce
  • cooked rice

Instructions

  1. In a skillet or wok, cook diagonally sliced celery, bean sprouts, and sliced onion in peanut oil until tender.
  2. Add chicken broth, bamboo shoots, water chestnuts, soy sauce, and cornstarch mixture to the skillet.
  3. Cook over low heat, stirring until the mixture thickens.
  4. Serve over cooked rice with additional soy sauce if desired.
