Ingredients

  • 1/2 cup cornstarch
  • 3 lb deboned chicken meat
  • 1/4 cup water
  • 1 1/2 teaspoons minced garlic
  • 1/4 cup soy sauce
  • 1 1/2 teaspoons minced ginger
  • 1 teaspoon white pepper
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup soy sauce
  • 1 cup cornstarch
  • 1/4 cup white vinegar
  • 1/4 cup cooking wine
  • 1 cup salad oil
  • 1 1/2 cups hot chicken broth

Instructions

  1. Mix cornstarch and water together to make the sauce base.
  2. Add minced garlic, minced ginger, sugar, soy sauce, vinegar, and wine to the sauce mixture.
  3. Add chicken broth and MSG, then stir until the sugar dissolves. Refrigerate until needed.
  4. In a separate bowl, combine chicken, soy sauce, and white pepper.
  5. Stir in the egg with the chicken mixture.
  6. Add cornstarch gradually until the chicken is coated evenly.
  7. Heat oil and deep-fry the chicken in small batches at 350°F (175°C) until crispy.
  8. Drain the fried chicken on paper towels.
  9. In a wok, heat a small amount of oil until hot.
  10. Add scallions and peppers and stir-fry briefly.
  11. Stir the prepared sauce and add it to the wok.
  12. Add the fried chicken to the sauce and cook until the sauce thickens.
  13. Adjust the sauce consistency with additional cornstarch or water as needed.
  14. Serve hot with rice.
