Ingredients

  • 1 lb pork tenderloin, cut into 1/2-inch pieces
  • 2 medium onions, chopped
  • 1 red bell pepper, chopped
  • 15 oz yellow hominy, rinsed and drained
  • 14.5 oz stewed tomatoes
  • 14.5 oz chicken broth
  • 2 chipotle peppers (canned), chopped and mashed
  • 1 Tbsp olive oil
  • 1/8 tsp salt

Instructions

  1. Brown the pork tenderloin pieces in olive oil in a large pot. Drain excess fat if necessary.
  2. Add chopped onions and red bell pepper to the pot; cook until vegetables are softened.
  3. Stir in rinsed and drained hominy, stewed tomatoes, chicken broth, and salt.
  4. Bring the mixture to a boil, then reduce heat to medium-low.
  5. Simmer until the pork is tender, about 30 minutes.
  6. Add chopped and mashed chipotle peppers sparingly if you prefer less heat, and cook for an additional 5-10 minutes.
