Ingredients

  • 1 1/2 lb boneless chicken breasts
  • 4 Tbsp oil
  • 1 jumbo sweet pepper, diced

  • 3 Tbsp chicken bouillon granules
  • 2 c long grain rice
  • 32 oz diced tomatoes
  • 8 oz salsa
  • 2 c shredded Cheddar cheese

Instructions

  1. Cut the chicken breasts into cubes.
  2. Brown the chicken in oil in a large skillet, then remove.
  3. In the same skillet, brown the diced sweet pepper and onion until tender.
  4. Add garlic, cumin, cinnamon, chili powder, chicken bouillon granules, diced tomatoes, and rice to the skillet.
  5. Bring to a boil, then reduce heat and boil for 5 minutes.
  6. Transfer the mixture into a 13 x 9-inch casserole dish.
  7. Top with the browned chicken pieces.
  8. Cover and bake at 350°F (175°C) for 35 minutes.
  9. Uncover, spread salsa evenly over the top, and sprinkle with shredded Cheddar cheese.
  10. Bake uncovered for an additional 5 minutes until cheese melts.
  11. Serve with sour cream and sliced black olives if desired.
