Ingredients

  • 1/2 c. diced green peppers
  • 1 medium onion
  • 1 pimento, chopped
  • 2 Tbsp. vegetable oil
  • 1 c. tomato paste
  • 1/2 c. chopped black olives
  • 1/4 c. shredded Cheddar cheese
  • 1/4 c. fine dry bread crumbs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 6 cube or minute steaks

Instructions

  1. Saute green peppers, onion, and pimento in oil until onion is soft.
  2. Stir in tomato paste, olives, cheese, bread crumbs, salt, and pepper.
  3. Remove from heat.
  4. Spread a thin layer of the mixture over each steak; roll up and fasten with wooden picks. Place seam side down in a shallow baking pan.
  5. Stir water into the remaining tomato mixture.
  6. Heat to boiling, then pour over the steaks.
  7. Bake in a 375° oven for 45 minutes, or until meat is tender.
