Ingredients

  • 2 (6 oz.) jars marinated artichoke hearts
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 4 eggs
  • 1/4 c. fine dry bread crumbs
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. oregano
  • 1/8 tsp. red hot pepper sauce
  • 2 Tbsp. parsley
  • 1/4 lb. Cheddar cheese, shredded

Instructions

  1. Drain one jar of artichoke hearts and use the juice to sauté the onion and garlic.
  2. Chop the artichoke hearts and add them to the sautéed mixture.
  3. In a bowl, beat the eggs and add the bread crumbs, salt, pepper, oregano, hot pepper sauce, and parsley.
  4. Stir in the sautéed mixture.
  5. Mix well and then add the shredded cheese.
  6. Pour the mixture into a 7 x 11-inch baking dish and bake at 325°F for 30 minutes.
  7. Let set for 2 hours before cutting into squares.
  8. Cut into 1-inch squares to serve as an appetizer or larger squares to serve as a vegetable.
  9. These squares can be served hot or cold.
