Ingredients

  • 1 cup butter or margarine
  • 2 cups flour
  • 2 cups oats
  • 1.5 cups brown sugar
  • 2/3 cup flaked coconut
  • 2/3 cup chopped unsalted roasted peanuts
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Place a 2-quart pan on the burner, add butter, and melt over low heat, stirring occasionally.
  3. Turn off the burner.
  4. In a large bowl, combine flour, oats, brown sugar, coconut, and chopped peanuts and mix well.
  5. Add melted butter to the dry mixture and mix until evenly combined.
  6. Spoon the mixture into an ungreased baking pan, scraping the bowl to get all the mixture.
  7. Press the mixture evenly into the pan to form a compact layer.
  8. Bake for about 20 minutes or until golden brown.
  9. Turn off the oven and sprinkle chocolate chips evenly over the warm bars.
  10. Use a spatula to spread the melted chocolate chips smoothly over the surface.
  11. Allow the bars to cool completely before cutting into 30 pieces.
