Ingredients

  • 6 oz. semi-sweet baking chocolate
  • 1/3 cup butter or margarine
  • 1 1/4 cups sifted powdered sugar
  • 1 (2 3/4 oz.) package sliced almonds, ground
  • 3 tablespoons milk, rum, or almond liqueur
  • 30 whole almonds
  • melted chocolate
  • 1/2 to 1 cup cocoa

Instructions

  1. In a small, heavy saucepan, melt together the chocolate and butter, stirring occasionally until melted.
  2. Remove from heat. Stir together the powdered sugar and 2/3 cup ground almonds.
  3. Stir into the chocolate mixture along with the milk, rum, or almond liqueur.
  4. Mix well until blended.
  5. Cover and chill mixture until firm, about 1 to 2 hours.
  6. Use a round teaspoonful of mixture for each candy.
  7. Mold the chocolate mixture around a whole almond to form a ball.
  8. If desired, roll balls in melted chocolate, cocoa powder, or ground almonds to coat.
  9. Put candies in foil wrappers.
  10. Place in freezer for 30 minutes before serving.

Tips & Substitutions

For a richer flavor, consider using dark chocolate instead of semi-sweet. If you don't have ground almonds, you can substitute with finely crushed walnuts or pecans. For a unique twist, add a dash of espresso powder to the mixture. Make sure to chill the mixture adequately; this helps in shaping the truffles more easily. To enhance the presentation, use colorful cupcake liners instead of foil wrappers.

Serving Suggestions

These Chocolate Almond Truffles make a delightful dessert on their own or can be served alongside a hot cup of coffee or tea. They pair beautifully with a rich dessert like Crumble Cake or a light dish such as Fresh String Bean Soup for a balanced meal. For a festive touch, consider arranging them on a platter with fresh fruits and nuts.

Storage & Reheating

Store leftover truffles in an airtight container in the refrigerator for up to two weeks. For longer storage, you can freeze them in a single layer, then transfer to a freezer-safe bag. When you're ready to enjoy, simply let them thaw in the refrigerator for a few hours. Avoid reheating as it may alter the texture.

Frequently Asked Questions

Can I use other types of chocolate for these truffles?

Yes, you can use milk chocolate or dark chocolate depending on your preference. Keep in mind that using a sweeter chocolate may require adjustments in sugar levels. Dark chocolate will give you a more intense flavor, while milk chocolate will be creamier.

How can I make these truffles vegan?

To make vegan truffles, substitute the butter with coconut oil or a plant-based butter alternative. Use dairy-free chocolate and consider almond milk or a non-dairy liqueur. These adjustments will keep the truffles delicious while adhering to a vegan diet.

What can I use instead of whole almonds for the center?

If whole almonds aren't available, consider using roasted hazelnuts, pecans, or even dried fruits like cherries or apricots for a different flavor profile. Each option will provide a unique texture and taste that complements the chocolate.
