Ingredients

  • 1/2 cup sugar
  • 2 tablespoons unsweetened cocoa
  • 1/4 teaspoon ground cinnamon
  • 1 cup (8 oz.) part skim Ricotta cheese
  • 1/4 cup evaporated skimmed milk
  • 1/4 cup egg substitute
  • 2 teaspoons vanilla extract
  • 3 egg whites
  • 1/4 teaspoon salt
  • vegetable cooking spray
  • 2 tablespoons graham cracker crumbs
  • 1 tablespoon chopped almonds, toasted

Instructions

  1. Combine the sugar, cocoa, cinnamon, ricotta cheese, evaporated milk, egg substitute, and vanilla extract in the container of an electric blender; blend on high until smooth.
  2. Pour the mixture into a large bowl and set aside.
  3. Combine egg whites and salt in a medium bowl; beat with an electric mixer at medium speed until stiff peaks form.
  4. Gently fold the beaten egg whites into the chocolate mixture.
  5. Spray paper muffin pan liners with vegetable cooking spray.
  6. Sprinkle the liners evenly with graham cracker crumbs.
  7. Spoon the batter into the liners, filling them three-quarters full.
  8. Bake at 250°F (120°C) for 30 minutes.
  9. Turn off the oven and leave the cups inside for an additional 30 minutes.
  10. Remove from the oven and transfer to wire racks to cool completely.
  11. Cover and chill the cups before serving.
  12. Just before serving, sprinkle the cups with toasted chopped almonds.
