Ingredients

  • 2 cups sifted cake flour
  • 1 3/4 cups sugar
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1/2 cup salad oil
  • 7 egg yolks
  • 3/4 cup cold water
  • 2 teaspoons vanilla
  • 7 to 8 egg whites
  • 1/2 teaspoon cream of tartar
  • 1 1/4 squares grated bittersweet chocolate

Instructions

  1. Sift together the cake flour, sugar, salt, and baking powder into a mixing bowl.
  2. Make a well in the center of the dry ingredients and add the salad oil, unbeaten egg yolks, cold water, and vanilla.
  3. Beat with an electric mixer until smooth.
  4. In a separate bowl, beat the egg whites with the cream of tartar until stiff peaks form.
  5. Gently fold the egg whites into the batter.
  6. Add the grated bittersweet chocolate and fold until evenly distributed.
  7. Pour the batter into an ungreased chiffon or tube pan.
  8. Bake at 350°F (175°C) for approximately 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Invert the pan and let the cake cool completely before removing.
