Ingredients

  • 1 lb. sweet or semi-sweet chocolate
  • 6 egg yolks
  • 10 oz. evaporated milk
  • 2 tsp. vanilla extract
  • 1 oz. cognac (optional)
  • 1 1/2 c. unsalted butter
  • whipped cream
  • 1 Tbsp. powdered sugar

Instructions

  1. Melt the chocolate in a double boiler.
  2. Beat together the egg yolks, evaporated milk, vanilla extract, and cognac if using.
  3. Add the egg yolk mixture to the melted chocolate and mix well.
  4. Simmer the mixture, stirring occasionally, until it thickens, about 15 minutes.
  5. Remove from heat and let stand for 30 minutes until the mixture is warm.
  6. Stir in the melted unsalted butter thoroughly.
  7. Pour the mixture into a 9 x 5 x 3-inch loaf pan lined with clear plastic.
  8. Freeze for 2 to 3 hours until firm.
