Ingredients

  • 1 cup pecans or walnuts
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 pound semisweet chocolate chips, divided
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Put nuts in a skillet over medium heat.
  2. Toast until fragrant, about 5 minutes, stirring often.
  3. Transfer to a cutting surface.
  4. When cool enough to handle, chop coarsely and set aside.
  5. In a bowl, combine flour, baking powder, and salt, whisking to blend.
  6. Set aside.
  7. In top of a double boiler over simmering water, combine half of the chocolate with butter.
  8. Stir gently until melted.
  9. Remove from heat and set aside to cool slightly.
  10. In bowl of an electric mixer, combine sugar and eggs, beat at high speed until thick and pale yellow, about 5 minutes.
  11. Lower speed to medium.
  12. Add chocolate mixture and vanilla, blending well.
  13. On low speed, add flour mixture and beat just until incorporated.
  14. Stir in nuts and remaining chocolate.
  15. Cover bowl tightly with plastic wrap and refrigerate until firm enough to handle, about 1 hour.
  16. Preheat oven to 350 degrees Fahrenheit.
  17. Line 2 baking sheets with parchment paper.
  18. Using a 1/4 cup ice cream scoop or a large tablespoon, drop portions of dough about 3 inches apart on sheets.
  19. Press down with fingers to form rounds about 1/2 inch thick.
  20. Transfer 1 baking sheet at a time to the center oven rack and bake 10 to 12 minutes or until cookies are set, but still a little soft in center.
  21. Cool sheet on a wire rack 10 to 15 minutes.
  22. Using a wide spatula, transfer cookies to a wire rack and cool completely.

Tips & Substitutions

For a richer flavor, consider using dark chocolate chips instead of semisweet. If you're short on nuts, you can substitute with sunflower seeds for a nut-free version. Ensure the chocolate mixture cools slightly before adding it to the eggs to prevent scrambling. To make the cookies even more decadent, try drizzling melted chocolate on top after baking.

Serving Suggestions

These Chocolate Mudpie Cookies are delightful on their own but can be served with a scoop of vanilla ice cream for an indulgent dessert. Pair them with a glass of milk or a cup of coffee. For a fun twist, try serving them alongside Fresh Blackberry Cobbler for a contrasting flavor experience.

Storage & Reheating

Store leftover cookies in an airtight container at room temperature for up to one week. For longer storage, freeze them in a freezer-safe bag for up to three months. To reheat, simply warm them in a preheated oven at 350°F for a few minutes to restore their soft texture.

Frequently Asked Questions

Can I use a different type of nut in this recipe?

Absolutely! While pecans and walnuts are recommended, you can substitute with almonds, hazelnuts, or even macadamia nuts for a unique twist. Just make sure to chop them coarsely for even distribution in the cookie dough.

What if I don't have a double boiler?

If you don't have a double boiler, you can create one by placing a heatproof bowl over a pot of simmering water. Just ensure the bottom of the bowl doesn’t touch the water. Alternatively, you can melt the chocolate in the microwave in short bursts, stirring in between to avoid burning.

How can I make these cookies gluten-free?

To make these cookies gluten-free, simply replace the all-purpose flour with a 1:1 gluten-free flour blend. Ensure that the chocolate chips you use are also certified gluten-free to maintain the integrity of the recipe.
