Ingredients

  • 1/2 cup reduced calorie margarine
  • 1 envelope low calorie chocolate pudding mix (about 2 cups prepared)
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon double-acting baking powder
  • 1/4 teaspoon salt
  • 3/4 cup raisins

Instructions

  1. Preheat oven to 350°F.
  2. Spray an 8 x 8 x 2-inch baking pan with nonstick cooking spray; set aside.
  3. In a medium bowl, using an electric mixer, beat together margarine, pudding mix, and sugar until combined.
  4. Beat in eggs one at a time, beating after each addition until well blended.
  5. Add vanilla extract and beat until incorporated.
  6. Add flour, baking powder, and salt; beat until blended, then fold in raisins.
  7. Pour batter into the prepared pan and bake for 20 minutes or until a cake tester inserted in the center comes out clean.
  8. Remove from oven and let cool on a wire rack.
  9. Cut the cooled cake in half lengthwise, then cut each half into 6 equal bars.
