Ingredients

  • 1 1/2 cups flour
  • 1 1/2 cups Quaker oats
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup margarine or butter
  • 1 cup raspberry preserves
  • 6 ounces semi-sweet chocolate pieces
  • 1/4 cup chopped almonds
  • 1/2 cup semi-sweet chocolate pieces or white chocolate, chopped and melted

Instructions

  1. Preheat oven to 375°F.
  2. Combine flour, oats, granulated sugar, brown sugar, baking powder, and salt in a bowl.
  3. Cut in chilled margarine or butter until mixture is crumbly.
  4. Reserve 1 cup of the oat mixture for the streusel topping; set aside.
  5. Press the remaining oat mixture into the bottom of an ungreased 9-inch square baking pan.
  6. Bake for 10 minutes.
  7. Spread raspberry preserves over the crust.
  8. Sprinkle evenly with semi-sweet chocolate pieces.
  9. Combine the reserved oat mixture with chopped almonds and sprinkle over the chocolate layer, patting gently.
  10. Bake for 30 to 35 minutes or until golden brown.
  11. Cool completely on a wire rack.
  12. Optional: Drizzle with melted chocolate and let it set before cutting into bars.
  13. Cut into 36 squares and store tightly covered.
