Ingredients

  • 16 oz. semi-sweet chocolate
  • 2 oz. semi-sweet chocolate for topping
  • 1/2 cup unsalted butter
  • 1 cup whipped cream
  • 1/2 tablespoon flour
  • 1 teaspoon hot water
  • 4 eggs

Instructions

  1. Melt butter and 16 ounces of semi-sweet chocolate in a double boiler.
  2. Add flour, 1/2 tablespoon sugar, and hot water; whip with a wire whisk.
  3. Add egg yolks one at a time, whipping constantly.
  4. Beat egg whites with 1/4 teaspoon cream of tartar until stiff but not dry.
  5. Fold the egg whites into the chocolate mixture.
  6. Turn the batter into an 8-inch spring-form pan.
  7. Bake at 425°F for 15 minutes.
  8. Allow the cake to cool.
  9. Whip the whipped cream with 1 teaspoon sugar.
  10. Frost the cooled cake with whipped cream and decorate with chocolate curls.
