  • 6 large cucumbers, peeled

  • 1 pint vinegar
  • 3 tablespoons mixed spices
  • 1/2 pint water
  • 4 cups sugar
  • 2 tablespoons celery salt
  • 1 teaspoon curry powder

Instructions

  1. Slice very thin the cucumbers, onions, and peppers.
  2. Sprinkle the sliced vegetables with 1/2 cup salt.
  3. Add enough cold water to cover vegetables and let stand overnight.
  4. Drain the vegetables thoroughly.
  5. Add vinegar, mixed spices, water, sugar, and celery salt to a pot and bring to a boil. Simmer for 10 minutes.
  6. Stir in curry powder just before removing from stove.
  7. Pack the hot mixture into bottles and seal.
