Ingredients

  • 2 cups sugar
  • 1 cup brown sugar
  • 2/3 cup shortening
  • 2 teaspoons cinnamon
  • 1/2 to 1 teaspoon cloves
  • 1/2 to 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup cold coffee
  • 2 teaspoons baking soda
  • 1 cup raisins
  • 2 or 4 eggs
  • 2 cups fine chopped apples
  • 3 cups flour

Instructions

  1. Sift together flour, soda, salt, and spices.
  2. Blend shortening and sugar until creamy.
  3. Add eggs; beat well.
  4. Alternately add dry ingredients and cold coffee to the mixture.
  5. Fold in chopped apples and raisins.
  6. Add nuts if desired.
  7. Pour batter into a greased and floured tube pan.
  8. Bake at 350°F (175°C) for 1 to 1 1/4 hours, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before icing if desired.
