Ingredients

  • 1 1/2 lb. stew meat, trimmed
  • 2 Tbsp. vegetable oil
  • 1 1/2 c. sliced celery
  • 1 c. chopped onion
  • 1 c. diced green pepper
  • 3 Tbsp. chopped pimiento
  • 1/2 c. uncooked long grain rice
  • 1 (10 1/2 oz.) can cream of mushroom soup
  • 1 c. milk
  • 2 Tbsp. soy sauce
  • 1 (3 oz.) can chow mein noodles

Instructions

  1. Cut the veal into 2 1/2-inch strips.
  2. Brown the veal in hot vegetable oil.
  3. Add sliced celery, chopped onion, diced green pepper, and chopped pimiento to the skillet.
  4. Cook until vegetables are tender.
  5. Turn the mixture into a 2-quart casserole dish.
  6. Mix in uncooked long grain rice, cream of mushroom soup, milk, and soy sauce.
  7. Cover and bake at 350°F for 1 1/4 hours, stirring occasionally.
  8. During the last 5 minutes of baking, uncover and sprinkle with chow mein noodles.
