Ingredients

  • 2 1/2 cups shredded sharp Cheddar cheese (about 10 oz.)
  • 1 (12 oz.) carton cottage cheese
  • 1 (8 oz.) package cream cheese, softened
  • 1 (4 oz.) jar diced pimientos, drained
  • 2 tablespoons dried minced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground red pepper
  • Sweet red pepper slices

Instructions

  1. Line a 1-quart star-shaped mold with plastic wrap.
  2. In a large bowl, combine shredded Cheddar cheese, cottage cheese, softened cream cheese, drained diced pimientos, dried minced onion, garlic powder, and ground red pepper. Mix with an electric mixer until smooth.
  3. Spoon the cheese mixture into the prepared mold.
  4. Cover and chill for 1 hour.
  5. Invert the mold onto a serving plate to remove the cheese spread.
  6. Remove the plastic wrap.
  7. Use a small star-shaped aspic cutter to cut out stars from sweet red pepper slices.
  8. Garnish the cheese star with cucumber slices, red pepper stars, and parsley.
  9. Cover and refrigerate until ready to serve.
