A light, creamy fruit salad with pineapple, oranges, bananas, and a tangy citrus sauce, perfect for summer gatherings or family desserts.

Ingredients

  • 2 cans crushed pineapple
  • 2/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 2 eggs
  • 1/4 cup orange juice
  • 3 tablespoons lemon juice
  • 1 tablespoon vegetable oil
  • 2 cans fruit cocktail
  • 2 cans mandarin oranges
  • 2 bananas
  • 1 cup cream

Instructions

  1. Drain the pineapple and save 1 cup of juice in a small pan.
  2. Set aside the drained pineapple.
  3. Add sugar, flour, eggs, orange juice, lemon juice, and vegetable oil to the pan of pineapple juice.
  4. Bring to a boil and cook for 1 minute; then remove from heat and let cool.
  5. In a salad bowl, combine the pineapple, drained fruit cocktail, drained mandarin oranges, and sliced bananas.
  6. Fold in the whipped cream and cooled citrus sauce.
  7. Chill the salad for several hours before serving.
