  • 4 bananas, thinly sliced
  • 1 pineapple, peeled, cored and thinly sliced or 1 (1 lb. 14 oz.) can pineapple chunks, drained
  • 3 limes, peeled and thinly sliced
  • 1/4 cup sugar (optional)
  • seeds of 2 pomegranates (optional)
  • 1 cup salted peanuts, chopped
  • 1/2 cup salad oil

Instructions

  1. Put lettuce in a large shallow bowl and arrange beets, oranges, apples, bananas, pineapple and limes over it.
  2. Sprinkle with sugar, if desired.
  3. Sprinkle pomegranate seeds and chopped peanuts over all.
  4. Mix oil with vinegar and salt to taste.
  5. Just before serving, pour over salad and mix gently.

Tips & Substitutions

For a vibrant salad, use fresh, ripe fruits and vegetables. If you can't find fresh pineapple, canned pineapple chunks work just as well. You can substitute the salted peanuts with chopped walnuts or pecans for a different flavor. Adjust the sugar according to your taste; some may prefer the natural sweetness of the fruits without any added sugar.

Serving Suggestions

This vibrant Christmas Eve Salad pairs beautifully with Spanish Rice Ii or can be served alongside roasted meats such as turkey or ham for a festive meal. It can also be a refreshing side dish for any holiday gathering. Consider offering a light vinaigrette on the side for guests who prefer additional dressing.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 2 days. However, the salad is best enjoyed fresh, as the fruits may release juices and become soggy. If reheating is necessary, avoid microwaving and instead allow the salad to come to room temperature before serving again.

Frequently Asked Questions

Can I make this salad ahead of time?

Yes, you can prepare the ingredients in advance. However, it's best to assemble the salad just before serving to keep the lettuce crisp and the fruits looking fresh. Store the sliced fruits and vegetables separately and mix them together with the dressing right before your gathering.

What can I use instead of iceberg lettuce?

If you want a different texture or flavor, you can substitute iceberg lettuce with romaine or mixed salad greens. These alternatives will provide a more robust flavor profile and add variety to the dish while still maintaining a fresh crunch.

Is this salad suitable for vegans?

Yes, this salad is naturally vegan, as it contains only fruits, vegetables, and nuts. Just ensure to use a vegan-friendly salad oil and avoid adding any animal-based products. It's a perfect option for those looking for vegan recipes during the holiday season.
