Instructions

  4. Add a bouquet garni, cloves, diced bacon, shallots, onions, and carrots to the casserole.
  5. Pour in brandy, red wine, beef stock, and enough water to almost cover the meat.
  6. Cover the casserole with heavy parchment paper, tying it tightly around the rim.
  7. Put the lid on the casserole and cook in a 250°F (120°C) oven for about 6 hours.
  8. Remove the beef to a deep platter and surround it with the cooked vegetables.
  9. Pour the juices over the beef and vegetables, skimming off excess fat.
