  • 1 tsp. strawberry or raspberry extract
  • green food coloring

Instructions

  1. In a large bowl, mix sugar, butter, egg, and vanilla until well blended.
  2. In another bowl, mix dry ingredients (flour, baking powder, salt). Add to butter mixture and blend until smooth.
  3. Divide the dough into three equal portions in separate bowls.
  4. To the first bowl, add melted chocolate and blend until smooth.
  5. In the second bowl, add almond extract and enough green food coloring; mix well. Add finely chopped almonds.
  6. In the third bowl, add strawberry or raspberry extract and red food coloring.
  7. Line a 9 x 5-inch loaf pan with foil and grease it.
  8. Spread the red dough evenly on the bottom of the pan. Refrigerate for 15 minutes.
  9. Remove from refrigerator and spread the chocolate dough on top of the red layer. Refrigerate for 15 minutes.
  10. Spread the green dough over the chocolate layer and refrigerate for at least 2 hours.
  11. Remove the dough and foil from the pan.
  12. Cut the chilled loaf into 3 lengthwise logs, then cut each log into 1/4-inch slices.
  13. Arrange slices 2 inches apart on a lightly greased cookie sheet.
  14. Bake at 350°F (175°C) for about 10 minutes. Cool on a rack.
