Ingredients

  • 1 lb butter
  • 2 cups sugar
  • 6 eggs
  • 1 tsp grated lemon rind
  • 1 Tbsp lemon juice
  • 1 Tbsp vanilla
  • 3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 qt chopped nuts
  • 1 cup chopped red and green candied cherries

Instructions

  1. Cream butter and sugar until fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Stir in lemon rind, lemon juice, and vanilla.
  4. Combine 1/4 cup flour with chopped nuts and cherries.
  5. Sift the remaining flour with baking powder and salt.
  6. Fold the dry mixture into the creamed mixture.
  7. Fold in the remaining nuts and cherries.
  8. Pour batter into a greased tube pan and bake at 300°F for 1 hour and 50 minutes or until a toothpick comes out clean.
  9. Cool completely before serving; the cake freezes well.
