  • 10 Anaheim or Poblano chili peppers, seeded and chopped

  • 2 c. coarsely chopped onion
  • 1/2 c. snipped fresh cilantro or parsley
  • 5 cloves garlic
  • 1/2 c. vinegar
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 tsp. pepper

Instructions

  1. Peel, seed, and coarsely chop the tomatoes (about 14 cups).
  2. Place the chopped tomatoes in a large colander and let drain for approximately 30 minutes.
  3. Transfer the drained tomatoes into an 8-quart Dutch oven.
  4. Bring the mixture to a boil over medium-high heat.
  5. Reduce heat and simmer uncovered for 45 to 50 minutes, stirring frequently, until thickened and similar in consistency to chunky salsa.
  6. Add chopped chili peppers, onion, cilantro, garlic, vinegar, sugar, salt, and pepper to the pot.
  7. Return the mixture to a boil, then remove from heat.
  8. Ladle the hot salsa into pint jars, leaving 1/2-inch headspace.
  9. Place lids on the jars and process in a boiling water bath for 35 minutes, starting timing when the water begins to boil.
