Ingredients

  • 6 oz. blanched almonds
  • 1/2 lb. butter
  • 2 tsp. cinnamon
  • 1 c. sugar
  • 1 egg
  • 2 c. flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a jelly roll pan or line it with parchment paper.
  3. In a food processor, pulse the blanched almonds until finely chopped but not overly ground.
  4. In a mixing bowl, cream the butter and sugar until light and fluffy.
  5. Add the egg yolk (reserve the egg white for later) and cinnamon; mix well.
  6. Gradually add the flour, mixing until a dough forms.
  7. Press half of the dough evenly into the prepared pan to form the base.
  8. Sprinkle the chopped almonds evenly over the crust.
  9. Crumble the remaining dough over the almonds, covering them completely.
  10. In a small bowl, beat the egg white until frothy and brush over the top of the dough.
  11. Bake in the preheated oven for about 20 minutes, or until golden brown.
  12. Allow to cool before cutting into bars and serving.
