Ingredients

  • 3/4 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup hazelnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a cookie sheet with parchment paper or grease it.
  3. In a medium bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs and vanilla extract.
  5. In a separate bowl, sift together flour, cinnamon, baking powder, and salt.
  6. Gradually mix the dry ingredients into the wet mixture until combined.
  7. Fold in hazelnuts.
  8. Divide dough in half and shape into two logs on the prepared baking sheet.
  9. Bake for 25 minutes or until lightly golden.
  10. Remove from oven and let cool for about 10 minutes.
  11. Slice logs diagonally into 1/2-inch thick pieces.
  12. Return slices to baking sheet and bake for an additional 10-12 minutes until crisp.
