Ingredients
- 8 oz. linguine ⓘ
- 1/2 lb. fresh asparagus, cut into 1 inch pieces ⓘ
- 1/2 lb. fresh mushrooms, sliced ⓘ
- 1 medium carrot, thinly sliced ⓘ
- 1 medium zucchini, diced ⓘ
- 2 cups julienned fully cooked ham ⓘ
- 1/4 cup butter or margarine ⓘ
- 1 cup whipping cream ⓘ
- 1/2 cup frozen peas ⓘ
- 3 green onions, sliced
- 1/4 cup grated Parmesan cheese ⓘ
- 1 teaspoon dried basil ⓘ
- 3/4 teaspoon salt ⓘ
Instructions
- Cook linguine according to package directions.
- Meanwhile, in a large skillet, sauté asparagus, mushrooms, carrot, zucchini, and ham in butter until the vegetables are tender.
- Add whipping cream, peas, green onions, Parmesan cheese, basil, salt, pepper, and nutmeg; bring to a boil.
- Reduce heat and simmer for 3 minutes, stirring frequently.
- Drain the cooked linguine and add it to the vegetable mixture; toss to coat evenly.
- Sprinkle with additional Parmesan cheese if desired and serve.
