Ingredients

  • 8 oz. linguine
  • 1/2 lb. fresh asparagus, cut into 1 inch pieces
  • 1/2 lb. fresh mushrooms, sliced
  • 1 medium carrot, thinly sliced
  • 1 medium zucchini, diced
  • 2 cups julienned fully cooked ham
  • 1/4 cup butter or margarine
  • 1 cup whipping cream
  • 1/2 cup frozen peas
  • 3 green onions, sliced
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 3/4 teaspoon salt

Instructions

  1. Cook linguine according to package directions.
  2. Meanwhile, in a large skillet, sauté asparagus, mushrooms, carrot, zucchini, and ham in butter until the vegetables are tender.
  3. Add whipping cream, peas, green onions, Parmesan cheese, basil, salt, pepper, and nutmeg; bring to a boil.
  4. Reduce heat and simmer for 3 minutes, stirring frequently.
  5. Drain the cooked linguine and add it to the vegetable mixture; toss to coat evenly.
  6. Sprinkle with additional Parmesan cheese if desired and serve.
