Ingredients

  • 4 Tbsp. unsalted butter
  • 1/2 c. carrots
  • 1/2 c. celery
  • 1/2 c. white onion
  • 2 c. long grain rice
  • 1/2 to 1 tsp. salt
  • 4 sticks cinnamon
  • 1/2 c. currants
  • 4 c. water

Instructions

  1. Melt 2 tablespoons of butter in a pan. Add carrots, celery, and onion. Cover and cook for 10 minutes over low heat, stirring occasionally.
  2. Add rice, salt, cinnamon sticks, currants, and water to the pan. Bring to a boil over high heat.
  3. Reduce heat to simmer, cover, and cook for 10 to 15 minutes until rice is tender and water is absorbed.
  4. Remove the cinnamon sticks. Add 2 tablespoons of butter and adjust seasonings if needed.
