Ingredients

  • 2 c. flour
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 egg
  • 1 Tbsp. shredded orange peel
  • 3/4 c. orange juice
  • 1/4 tsp. shredded lemon peel
  • 2 Tbsp. lemon juice
  • 2 Tbsp. cooking oil
  • 1/2 c. chopped walnuts

Instructions

  1. In a bowl, stir together the flour, sugar, salt, and baking soda.
  2. Combine the egg, orange juice, lemon juice, and cooking oil.
  3. Add the egg mixture to the dry ingredients, stirring just until the dry ingredients are moistened.
  4. Fold in the chopped walnuts.
  5. Pour the batter into an 8 x 4 x 2-inch loaf pan.
  6. Bake at 350°F for 50 to 60 minutes.
  7. Cool for 10 minutes.
  8. Remove the bread from the pan.
  9. Cool on a wire rack.
  10. Wrap in foil and store overnight before slicing.
