Ingredients

  • 1 Tbsp. olive oil
  • 2 large onions
  • 1 clove garlic
  • 1 c. celery
  • 1/2 tsp. dried dill
  • 1/2 tsp. dried thyme
  • 4 c. chicken broth
  • 2 c. raw potatoes
  • 1 (16 oz.) can creamed corn
  • 2 c. milk
  • 7 oz. chopped clams

Instructions

  1. In a 4-quart saucepan, bring chicken broth to a boil.
  2. Meanwhile, heat olive oil in a skillet and cook chopped onions, minced garlic, and chopped celery for 10 minutes or until slightly soft.
  3. Stir in dried dill and thyme.
  4. Add cooked vegetables to the broth along with the cubed potatoes.
  5. Cover the pot and simmer about 15 minutes or until potatoes are tender.
  6. Stir in creamed corn and simmer for 5 minutes.
  7. Add milk and undrained chopped clams to the soup.
  8. Simmer until heated through, about 5 minutes, without boiling.
  9. Adjust salt if necessary.
  10. Sprinkle with chopped parsley if desired.
