Ingredients

  • 1 pint Clams or Quahogs
  • 1 3/4 cups Sifted Flour
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1 cup Milk
  • 2 teaspoons grated Onion

Instructions

  1. Drain clams and chop them.
  2. Sift all dry ingredients (flour, baking powder, nutmeg, salt) together in a bowl.
  3. In a separate bowl, combine beaten eggs, milk, grated onion, and chopped clams.
  4. Pour the wet mixture into the dry ingredients and stir until smooth.
  5. Drop batter by teaspoonfuls into hot fat at 350 degrees Fahrenheit.
  6. Fry about three minutes or until golden brown.
  7. Drain on paper towels before serving.
