Clam & Spinach Lasagna

Ingredients

  • 8 oz. lasagna noodles
  • 12 oz. minced clams
  • 4 Tbsp. butter
  • 1/4 c. flour
  • 8 oz. bottle clam juice
  • 2 cloves garlic
  • 1/4 tsp. oregano
  • 1/4 tsp. basil
  • 1/4 tsp. thyme
  • 1/4 tsp. marjoram
  • 1/4 c. parsley
  • 3 Tbsp. lemon juice

Instructions

  1. Cook lasagna noodles according to package instructions and set aside.
  2. Drain the minced clams and reserve the clam juice.
  3. In a 2-3 quart pan, melt butter over medium heat.
  4. Add flour and stir until bubbly.
  5. Gradually stir in the reserved clam juice and bottled clam juice, cooking until the sauce thickens, about 5 minutes.
  6. Remove the sauce from heat and stir in the clams, minced garlic, oregano, basil, thyme, marjoram, chopped parsley, and lemon juice.
  7. Line a 9x13 inch baking dish with one-third of the cooked noodles.
  8. Spread cottage cheese evenly over the noodles.
  9. Top with one-third of the clam sauce.
  10. Add a second layer of noodles.
  11. Squeeze all liquid out of the spinach and arrange over the noodles.
  12. Sprinkle half of the shredded Jack cheese over the spinach.
  13. Pour half of the remaining clam sauce over the cheese.
  14. Add another layer of noodles, then sprinkle with remaining Jack cheese.
  15. Pour the remaining sauce over the top layer.
  16. Finish with a final layer of noodles, cheese, and sauce as desired.
