Ingredients

  • 12 to 15 small hard-shell clams

  • 2 tsp. lemon juice
  • 1/4 tsp. paprika

Instructions

  1. Scrub outside of clam shells thoroughly, discarding any broken or open clams.
  2. Soak clams in salted water for at least 3 hours to clean.
  3. Rinse and drain clams.
  4. Place water in a 2-quart casserole.
  5. Microwave at High for 2 to 3 1/2 minutes or until water boils.
  6. Add clams to the casserole.
  7. Cover and microwave at High for 3 to 5 1/2 minutes or until clams open, stirring once.
  8. Remove clams from casserole as they begin to open.
  9. Remove each clam from its shell.
  10. Reserve half of each shell.
  11. Mince the clams.
  12. Set aside for serving or further preparation.
