Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup confectioners sugar
  • 6 to 8 tablespoons melted butter
  • 1 pound cottage cheese
  • 1 pint sour cream
  • 8 ounces softened cream cheese
  • 3 large eggs
  • 1 cup sugar
  • 1/4 cup flour
  • 1 teaspoon vanilla
  • 1 can cherry pie filling

Instructions

  1. Preheat the oven to 300°F.
  2. Butter a 12-inch spring-form pan. Mix the graham cracker crumbs, confectioners sugar, and melted butter, then press this mixture into the bottom of the pan.
  3. Bake the crust for 15 minutes or until set. Remove and cool before filling. Raise the oven temperature to 350°F.
  4. In a mixing bowl, beat the cottage cheese, sour cream, softened cream cheese, eggs, sugar, flour, and vanilla with an electric mixer for 10 minutes until the batter is very thin.
  5. Pour the batter over the cooled crust and bake for 40 minutes.
  6. Turn off the oven but leave the cake inside for an additional 30 minutes.
  7. Do not open the oven door during this time.
  8. Remove the cake from the oven and cool it for 2 hours.
  9. Run a thin metal spatula around the edge of the cake to loosen it, then remove the sides of the spring-form pan.
  10. Slide the cake onto a serving plate. Top with cherry pie filling or serve with fresh sliced strawberries or blueberries, if desired.

Tips & Substitutions

For a smoother cheesecake, ensure all dairy ingredients are at room temperature before mixing. If you're short on graham crackers, crushed cookies like Oreos or vanilla wafers work well as a substitute for the crust. Experiment with flavors by adding lemon zest or almond extract to the batter. Avoid overmixing once the eggs are added to keep the cheesecake from cracking.

Serving Suggestions

Serve the cheesecake plain or topped with cherry pie filling for a classic touch. It pairs beautifully with fresh fruit like strawberries or blueberries for a refreshing contrast. Consider serving it alongside a light salad, such as Turkey And Nectarine Salad, for a balanced meal. A dollop of whipped cream can also enhance the overall experience.

Storage & Reheating

Store leftover cheesecake in the refrigerator, covered with plastic wrap or in an airtight container, for up to 5 days. For longer storage, you can freeze individual slices wrapped tightly in plastic wrap and then foil. To reheat, let it thaw in the refrigerator overnight and serve chilled or at room temperature.

Frequently Asked Questions

Can I use different types of cheese in this cheesecake?

Yes, while cottage cheese is traditional, you can experiment with ricotta or mascarpone for a different texture and flavor. Just ensure they are smooth and well-blended to maintain the creamy consistency of the cheesecake.

What should I do if my cheesecake cracks while baking?

Cracking often occurs due to rapid temperature changes or overmixing. To prevent this, bake at a lower temperature and avoid opening the oven door during baking. If a crack does appear, you can cover it with fruit topping or whipped cream for a beautiful presentation.

Can I make this cheesecake ahead of time?

Absolutely! This cheesecake can be made a day or two in advance. It actually tastes better after resting in the refrigerator, allowing the flavors to meld. Just make sure to cover it properly to prevent it from absorbing other odors in the fridge.
