Ingredients

  • 3 Tbsp. olive oil
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 1 medium zucchini, cut into 1/2-inch slices and then cubed
  • 5 cloves garlic, minced
  • 3/4 lb. plum tomatoes, skinned and diced
  • 1 Tbsp. minced parsley
  • salt
  • freshly ground pepper

Instructions

  1. Heat oil in a large saucepan and sauté the bell pepper, onion, zucchini, and garlic until the onion is transparent.
  2. Add the tomatoes, parsley, salt, and pepper.
  3. Cook over medium heat, uncovered, for 30 minutes.
  4. At the end of the cooking time, turn up the heat to reduce the liquid; the vegetables should be thick, not soupy.
