Ingredients

  • 3 to 4 cups finely chopped iceberg and romaine lettuce
  • 1/2 to 3/4 cup finely chopped skinned and boned cooked chicken breast
  • 3 green onions, minced
  • 1 hard-cooked egg, finely chopped
  • 1 medium tomato, peeled, seeded, and minced
  • 4 slices bacon, fried crisp and crumbled
  • 1 (1 1/4 oz.) package blue cheese, crumbled
  • 1 small ripe avocado, peeled, seeded, and minced
  • 1 teaspoon lemon juice
  • 1/3 cup oil and vinegar dressing
  • pepper to taste

Instructions

  1. Spread chopped lettuce evenly over the bottom of a shallow medium-large salad bowl.
  2. Arrange ingredients in rows over the lettuce with minced cooked chicken in a narrow strip down the center, tomato, blue cheese, and avocado on one side, and green onion, egg, and bacon on the other side.
  3. Toss minced avocado in lemon juice to prevent darkening.
  4. Cover the salad with a damp paper towel and refrigerate until ready to serve.
  5. Before serving, add oil and vinegar dressing and pepper to taste.
  6. Toss the salad at the table to combine all ingredients evenly.
  7. Serve on chilled lettuce-lined plates.

Tips & Substitutions

To enhance freshness, consider substituting the iceberg lettuce with spinach or mixed greens for added flavor and nutrition. If you prefer a different protein, grilled shrimp or diced turkey can be excellent alternatives. For a creamier dressing, mix in a dollop of Greek yogurt with the oil and vinegar dressing.

Serving Suggestions

Serve the Cobb salad chilled on plates lined with additional lettuce leaves for an impressive presentation. This dish pairs wonderfully with a light soup, such as tomato bisque, or crunchy breadsticks. For a complete meal, consider serving it alongside a refreshing fruit salad.

Storage & Reheating

Leftover Cobb salad can be stored in an airtight container in the refrigerator for up to 2 days. To prevent sogginess, store the dressing separately and add it just before serving. If the salad has been mixed, consume it within one day for optimal freshness.

Frequently Asked Questions

Can I make this salad ahead of time?

Yes, you can prepare the individual components in advance and assemble the salad just before serving. Keep the dressing separate to maintain the crispness of the vegetables and the freshness of the avocado.

What can I substitute for blue cheese?

If you're not a fan of blue cheese, feta or goat cheese can serve as excellent substitutes, offering a different flavor profile while still providing a creamy texture.

Is there a vegetarian version of this salad?

Absolutely! To make a vegetarian Cobb salad, replace the chicken and bacon with chickpeas or grilled tofu, and use nutritional yeast for a cheesy flavor. You can add extra vegetables like bell peppers for more texture.
