Ingredients

  • 1 can crushed pineapple
  • 1 can fruit cocktail
  • 1 (8 oz.) package cream cheese
  • 1 carton whipped topping
  • 1 can shredded coconut
  • 40 round salty butter crackers
  • 3 egg whites
  • 3/4 cup sugar

Instructions

  1. Drain the crushed pineapple and fruit cocktail.
  2. Crush the butter crackers.
  3. Beat the egg whites until stiff peaks form.
  4. Gradually add sugar to the beaten egg whites.
  5. Fold in nuts and crushed crackers.
  6. Spread the mixture in a greased pan.
  7. Bake at 350°F (175°C) for 20 minutes.
  8. Allow the crust to cool.
  9. Beat the cream cheese until smooth.
  10. Fold in whipped topping and drained fruit cocktail.
  11. Spread the cream cheese mixture over the cooled crust.
  12. Sprinkle shredded coconut on top.
  13. Cover and refrigerate or freeze before serving.
