Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 2 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup skim milk
  • 2 tablespoons oil
  • 1 teaspoon vanilla
  • nonstick vegetable cooking spray
  • 3/4 cup brown sugar
  • 1/4 cup cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sift together the flour, sugar, 2 tablespoons of cocoa powder, baking powder, and salt.
  3. Add the milk, oil, and vanilla, mixing by hand until smooth.
  4. Pour the batter into an 8 x 8 x 2-inch baking pan sprayed with nonstick vegetable cooking spray.
  5. Combine the brown sugar, 1/4 cup of cocoa powder, and water to make the topping, then pour over the batter.
  6. Bake for 45 minutes or until a toothpick inserted into the cake comes out clean.
