Ingredients

  • 3 egg yolks
  • pinch of salt
  • 2 1/2 cups milk
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1 teaspoon vanilla
  • 1 cup flaked coconut
  • 9-inch baked pie crust

Instructions

  1. Combine egg yolks, salt, and milk in a saucepan.
  2. Stir over medium heat until warm.
  3. Combine sugar and flour, mixing well.
  4. Gradually add the milk mixture to the sugar and flour, stirring constantly.
  5. Cook until the mixture thickens.
  6. Stir in vanilla and flaked coconut.
  7. Remove from heat and pour into the baked pie crust.
  8. Chill the pie until set before serving.
