Ingredients

  • 1 large package coconut, frozen
  • 1 box white Duncan Hines cake mix
  • 8 oz Cool Whip
  • 1 pint sour cream
  • 3 eggs
  • 3/4 pound oil

Instructions

  1. Preheat your oven and prepare three round cake pans.
  2. Mix the white cake mix according to package instructions and divide the batter evenly among the three pans.
  3. Bake the cakes until a toothpick inserted in the center comes out clean, then let them cool completely.
  4. Thaw the frozen coconut if necessary and set aside.
  5. In a mixing bowl, combine the Cool Whip, sour cream, and shredded coconut to make the filling.
  6. Place one cake layer on a serving plate, spread with a layer of the coconut filling, then top with the second cake layer.
  7. Repeat with the remaining cake layer and filling, then frost the outside of the cake as desired.
  8. Chill the cake before serving to allow flavors to meld.
