Instructions
- Heat oven to 350°F and grease and flour a tube or Bundt pan.
- Beat all ingredients except coconut and powdered sugar in a large bowl on low speed for 30 seconds, scraping sides frequently.
- Beat on medium speed for 4 minutes.
- Pour the batter into the prepared pan.
- Bake for 55 to 60 minutes until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then remove from pan and let cool completely.
- Sprinkle with powdered sugar before serving.
