A moist and flavorful banana cake baked in coffee cans, featuring ripe bananas, chocolate chips, nuts, and maraschino cherries, perfect for casual gatherings and dessert lovers.

Ingredients

  • 6 ripe bananas
  • 2 sticks margarine (melted)
  • 4 eggs
  • 2 cups sugar
  • 4 cups flour
  • 2 teaspoons baking soda
  • pinch of salt
  • 1/2 cup or more chocolate chips
  • 1/2 cup or more nuts
  • 10 oz. jar of maraschino cherries (drained)

Instructions

  1. Use a potato masher to mash bananas until liquid.
  2. Continue stirring in all ingredients: melted margarine, eggs, sugar, flour, baking soda, salt, chocolate chips, nuts, and drained maraschino cherries.
  3. Preheat oven to 350°F (175°C). Butter and flour four 1-pound coffee cans.
  4. Pour the batter equally into the four prepared cans.
  5. Bake approximately 1 hour or until the tops are brown and the cake is done.
