Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 3 teaspoons baking powder
  • 2 teaspoons instant coffee powder
  • 1 teaspoon vanilla
  • 1/2 cup crushed corn flakes
  • 1/2 teaspoon salt
  • 5 tablespoons melted butter or oleo, divided
  • 1 cup milk
  • 1 egg
  • 2 tablespoons sugar

Instructions

  1. Mix and sift flour, 1 cup sugar, baking powder, coffee powder, and salt.
  2. Combine 3 tablespoons melted butter, milk, beaten egg, and vanilla.
  3. Stir the wet ingredients into the dry ingredients until well blended.
  4. Pour the batter into a greased 8-inch square pan or deep pie dish.
  5. Combine crushed corn flakes, remaining 2 tablespoons melted butter, 2 tablespoons sugar, and cinnamon; mix well.
  6. Sprinkle the cornflake mixture evenly over the batter in the pan.
  7. Bake at 350°F (175°C) for 45 minutes or until the cake tests done.
  8. Serve warm or cold.
