Ingredients

  • 1 cup sugar
  • 1/2 cup shortening
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons soda
  • 1 teaspoon cloves
  • 1/2 teaspoon salt
  • 3/4 cup strong cold coffee
  • 1 cup chopped raisins
  • 1/2 cup nuts

Instructions

  1. Cream together sugar and shortening in a mixing bowl.
  2. Add beaten egg and vanilla extract; mix well.
  3. In a separate bowl, combine the dry ingredients: flour, baking powder, soda, cloves, and salt.
  4. Alternately add the dry mixture and cold coffee to the creamed mixture, mixing after each addition.
  5. Stir in chopped raisins and nuts until evenly distributed.
  6. Drop by teaspoonfuls onto a cookie sheet covered with wax paper.
  7. Bake in a preheated oven at 400°F (200°C) for 15 minutes or until lightly browned.
  8. Remove from oven and let cookies cool slightly before transferring to a wire rack.
